Do you love dessert, and also eating healthy? We have a great recipe for you to try! Satisfy those sweet cravings with this delicious berry crumble. You can use any berries that you like- or are in season. Adding our granola to the crumble makes it extra crunchy. Have it for dessert with a scoop of vanilla ice cream, or as breakfast with some Greek yogurt. Try it out at home or bring it along to your next get together ( just be prepared to be asked for the recipe!) If you like to bake, consider buying one of our 5 pound bulk bags of granola. We like to use Maple Pecan Granola in this recipe, but really any of our flavors will work. Berry Crumble Recipe
For The Berry Base:
4 Cups mixed berries (fresh or frozen)
2 Tablespoon maple Syrup
Juice of one line or lemon
1 Teaspoon tapioca flour (or cornstarch - this is to thicken the base)
2 Teaspoons vanilla extract
For The Crumble
1 cup almond flower
2 Table spoons coconut sugar or regular sugar
1/3 cup melted ghee (or coconut oil)
2 Teaspoons vanilla extract
1 cup chopped pecans
1/2 cup oats
1/2 cup Wildflower Granola
pinch of salt
1/2 teaspoon cinnamon
Directions:
1. Combine the ingredients for the berry base in a bowl
2 Preheat oven to 350 degrees
3 Pour the berry mixture into a 9x9 baking dish
4 Combine all the crumble ingredients except for granola. Just set the granola aside for now.
5 Pour the crumble mixture on top of the berries and spread it around evenly.
6 Bake for 35 min. After 35 min, add the granola on top of the crumble and bake an additional 5 min. Let it cool + add the biggest scoop of ice cream!Â
This recipe has become a favorite at our house! As a mom I am always working an angle to get more fruits and veggies in dishes the kiddos enjoy. Teaching them that healthy food is also delicious makes me so happy. My boys actually enjoy this with yogurt for breakfast just as much as they do for dessert. The protein in the yogurt makes for a balanced meal. I hope your family enjoys it as much as we do.
